CHRISTMAS CHICKEN CURRY SAUCE [TIKKA MASALA]

Here is another add to my previous article DELICIOUS RIVERS STATE NATIVE SOUP. I hope the year has been kind to everyone. This here is my go-to vegetable sauce. It's quick, it's easy and oh is it delicious! Take a break from fried tomato stew and try this Indian inspired Chicken Curry Sauce, I promise its worth it!

I am using chicken as this will be commonly eaten this Christmas. Chicken Curry Sauce is a nice departure from the regular stuff your Family/Friends/Guests are likely to expect on Christmas lunch. Enjoy and Merry Christmas!

The use of curry powder in stews always gives the impression of a good cook. When the aroma of the curry feels the air, your neighbors may want to be invited over for dinner.

Recipe for making Chicken Curry Sauce (Chicken Tikka Masala)

Ingredients:

  • Portion shredded Chicken

  • Curry powder

  • 1 tablespoon Flour (or Corn Starch)

  • Ground black Pepper to taste

  • Powdered Chicken stock 

    Vegetable/Olive oil

  • Chicken seasoning to taste 

  • Whole Oregano 

  • Two medium bulb Onion 

  • Generous Portion Carrots 

  • Generous Portion Cauliflower 

  • Generous Portion Green Bell Pepper 

  • Generous Portion Green Beans

  • Dash of Ajinomoto and Salt to taste

How to Prepare:  

- Rinse all your vegetables very well, chop, slice and set aside.
- Season meat with black pepper, Whole Oregano, Chicken seasoning powder and set aside. 
- Heat a large skillet over medium heat. Add in the oil. Add in the seasoned chicken and stir on all sides until brown.

- Mix the flour and curry powder with water and set aside [Let the thickness be same with that of liquid evaporated milk]
- Add the grated ginger, chopped garlic and sliced Onions and sauté until fragrant.
- Now Add in your favourite combination of vegetables. Just make sure that there's carrot in there because it gives this sauce a rich delicious taste. [You need to be careful so you don't overcook the vegetables]

- Stir fry for about about 3 minutes to cook . lower heat and Stir all through to prevent burning
- Add the flour and curry paste and cook for 3 minutes until it is cooked.
 - Remove from heat & add the chicken and remaining seasoning. Add Salt/Maggi/Knorr/Royyco to Taste.
- Then return pot to heat and cook until sauce starts to thicken.
- Stir and It's Ready!
Serve the Chicken Curry Sauce with white Basmati rice for an Indian Experience.
